FOUR SEASONS HOTEL, JUMEIRAH BEACH ROAD
COYA Dubai brings a trace of Incan heritage into the Middle East with its impressive, contemporary Peruvian restaurant concept. The venue opened on the 16th December 2014 and serves as a cultural gateway to the Andes, creating an experience that is multi-dimensional, multi-sensory and truly unique to the culinary scene of the UAE.
APRICOT MEZCAL NEGRONI
As much as they kept the classic recipe untouched as far their signature serves are from the usual twists. This Negroni replaces Gin to Mezcal, Campari to Cynar and Sweet Vermouth to a mix of Antica Formula and Apricot Brandy.
The drink is served with a Tonka beans infused mezcal soaked apricot. Quite unusual as it sounds it will grow on you faster than you could imagine.
Member's Only Negroni
As the name suggests this Latin American twist will definitely turn your head around. Luckily, you can freely enjoy the buzz in their gorgeous private Members’ Club and get your head spun not only by the COYA’s signature but also by the live band that plays every night. The drink combines cooked beetroot infused Vida Mezcal and Peruvian Pisco with Amaro Averna and a touch of Crème de Cassis.
The team in COYA believes that, if a drink reaches the ”classic” title is for a reason and shall not be messed with. Their Classic Negroni is as Classic as it gets.
Built over ice with equal part of Italian Vermouth, Campari and Gin, sprinkled and served with a fresh orange zest, ready to sip, kick back and feel like Camillo Negroni in the 1919’s Florence.
